Eco-champs and owners of the award-winning plant-based restaurant, The Plot, the Waites (The Plot, Wrench & Rodent Seabasstropub, Shoots Fish & Beer, The Brine Box) of Oceanside, CA, have expanded their mission to bring plant-forward eating to the mainstream with the opening of a second location in Costa Mesa's The CAMP. The Plot's menu features exceptionally creative and sustainable plant-based dishes with a zero-waste ethos business model.
The Plot in Costa Mesa, is dedicated to local and real ingredients, as well as to sustainability and regenerative practices. The menu features plant-based proteins made in-house, with a variety of unique dishes like Chickën and Waffles, Shepherd’s Pie, Beet Reuben, and Grilled Cabbage. The Plot seeks to go beyond sustainability in order to become a regenerative business, emphasizing the total utilization of ingredients to minimize waste with an aim to help repair our environment. They do this by using all but <1% of the produce and dry goods coming into their restaurant as compared to the industry average where 4-10% of food coming in is thrown away before it hits the plate.
