Folks Pizzeria, located inside The CAMP, is a one-of-a-kind pizza experience. Chef and partner Joey Booterbaugh makes naturally leavened dough that The Orange County Register restaurant critic Brad Johnson says, "is thin in the center and puffy around the outer edge. And while its shapely figure might look similar to Neapolitan at first glance, in the mouth it has a texture and character more like sourdough. Only it’s not sour. It is delicious.” He also named it one of the best pizzas in Orange County in 2020.
Folks offers red and white pizzas, which are all 14” and serve 2-3 people. Favorite red pizzas are the margherita, a great vegetarian option, and the fennel sausage with mozzarella, pecorino, parmesan, basil, fennel pollen and garlic oil. White pizzas include three vegetarian options–bianca, mushroom and Weiser farm potatoes–as well as pancetta with shaved Brussels sprouts, fontina, mozzarella, pecorino, basil and extra virgin olive oil and soppressata with olives, fontina, mozzarella, basil and chili oil.
The pizzas are delicious, but don’t skip out on the salads, shareables and desserts! They’re all tasty too. The free-range chicken wings and the meatballs are not to be missed. The wings are made with with Italian fish sauce, n’duja, parsley and lemon. The meatballs are in a pork cheek gravy with basil, parsley, chives and come with a side of grilled sourdough.
For dessert try the chocolate budino served with créme fraîche whipped creme, sea salt caramel and a double chocolate cookie. Folks also has a selection of natural wines, beers and other beverages.
