Boil and Bake Bagels Costa Mesa are making fresh bagels daily, taking on the traditional deli atmosphere. Owner Carlos Perez grew up in the bagel business, working at his parents' restaurant since high school. Once he realized his love for food and hunger to learn more, he decided to take night jobs at local restaurants as a cook. Carlos is actually the son of the owners of Shirley's Bagels, another Costa Mesa institution. Boil and Bake calls itself a California deli of sorts, specializing in California-style, naturally leavened Bagels and house-cured fish.
